The 6th annual Cattlemen’s BBQ is happening July 13th & 14th at the San Juan Convention Center with the Sheraton Convention Center Hotel as headquarters for all the BBQ action.
With the continued growth of the competition since 2008 has come some fantastic smoking and grilling built around two days of hot competition. The culinary arts, authentic slow smoked BBQ, Grilling and Caribbean whole hog on a spit are parts of some of best BBQ you will find, all prepared by some of the best Pit Master in the Caribbean at the Cattlemen’s BBQ Competition.
We are expecting guest teams from off Island that include Antigua, USA, Bermuda, and Nassau Bahamas.
Kansas City BBQ Society (KCBS) was established in 1984 in Kansas City and stands as the world’s most recognized authoritative body on BBQ. They wrote the book so to speak and it is an honor and a pleasure to see that Puerto Rico has advanced over the past two decades from a grilling only community to embrace and excel at the time tested art of slow smoking real BBQ. Over the past few years Puerto has made some huge strides in BBQ, and made some real good friends at The Jack Daniel’s World Invitational and Memphis and May. One of those good friends is Wayne Lohman and his wife Maria. They will be the KCBS Reps officiating on Sunday for the BBQ competition. Competitors read your new rules carefully. There are a few changes but, for the most part, the Caribbean BBQ Association was very close to the KCBS way of doing BBQ. Puerto Rico is no stranger to KCBS and had competed in at least 8 or 9 KCBS stateside contests.
The two days of competition are broken out like this:
Saturday Competition Categories & Turn in time
“Ancillary Contests only” Grand Champion/Reserve Grand Champion/ and 3rd Place cash and medals
- Whole Hog/ Lechon Asado: Pig provided 60-80 pounds. May be cooked over charcoals, in a roaster, Caja China, smoker or other cooking device. Turn in anytime between 12 noon and 3 pm. When you are ready to have your pig judged notify the Head Judge and a team of judges will visit your booth and judge the pig whole and uncut. All Judges will sample and score the entry in your booth.
- Buns Build a Better Burger (12:20-12:30)
- Steak (1:20- 1:30)
- Frank’s Red Hot Wings of Fame (2:20-2:30) wings provided by Kikiri Quirch
- Grill Pork (Chef’s choice) (3:20-3:30) Provided by Farmland Foods
- Seafood (Chef’s Choice) (4:20-4:30) Provided by Panami Seafood
- Ricardo Camayd Showmanship Award / Best Booth
The “Culinary University Challenge”
Saturday 4 heats of the Culinary University Chef’s Challenge. Culinary Students go head to head creating exciting, colorful and tasteful dishes. Meet our future chefs to grace our Island.
Sunday Competition Categories & Turn in time for category - BBQ Sauce (12:00 to 12:10pm)
- Poultry: (1:00 to 1:10pm) By Kikirri Quirch
- Pork Shoulder / Pork Butt: (2:00 to 2:10) by Farmland Foods
- Pork Ribs: (3:00 to 3:10) By Farmland Foods
- Beef Brisket: (4:00 to 4:10) By Quirch Foods
The Professional Chef’s Challenge “CC”
Don’t miss the hottest grilling action at the two day event, the professional Chef’s Challenge. Puerto Rico has some of the very best in the Caribbean. And 12 have been hand-picked to represent Puerto Rico on their main stage. Mystery boxes filled with difficult, complex & challenging ingredients. Contestants have just 1 hour for opening their boxes to produce 3 identical and fabulous dishes to wow the Judges. Cooking under pressure at its finest.
Now mix all this up with 2 tons (4000 Pounds) of great BBQ prepared by the competitors and a few choice local Culinary schools. The BBQ is all free all day till it’s gone with your $20.00 adult ticket. If attending you will sample free spare ribs, Texas beef brisket, slow smoke pork butt, chicken and whole hog cooked on the spit, slow smoked, in the Caja China, and every which way they can cook it.
Now kick it up a notch with some live music each day, a hot wings eating contest, guest appearances both days by Famous Dave of Famous Dave’s BBQ Restaurants, Wilber the Pig, a cool kids play area, and plenty of ice cold refreshments. Sounds like a great big BBQ.
Tickets on sale at the door only each day of the event $20.00 adults. Event opens to the public at noon both days.

You have seen it on, Food Network, Pit Masters TV show, and the Food Network & the Cooking Channel. Now the Caribbean BBQ Circuit is coming to Nassau Bahamas! Let’s find out who’s the Prince of Pork, the Bad Boy of Beef, the Sultan of Sauce, the King of Ribs.
Thompson Trading Co. and Cattlemen’s BBQ Sauces are presenting the 1st Annual Cattlemen’s Smokin' Hot BBQ competition in Nassau. We are looking for BBQ teams to compete for Cash, Medals and the chance to represent Nassau Bahamas in the 6th Annual Cattlemen’s Caribbean BBQ competition June 29th& 30th 2013 in San Juan Puerto Rico.
You do not have to be professional Chef to compete.
The BBQ competition will be held at The Green Parrot Bar in Nassau on Saturday April 20th at the new Waterfront Boardwalk. Amateurs, professional chef’s, backyard grillers & weekend worriers are welcome to compete. No distinction between pros and armatures in this CBBQA Sanctioned BBQ Competition. Teams can be women, men, or coed, culinary students. Business & Corporate teams( a team from your place of work), your neighborhood, your church, school, or Restaurant or Bar. Don’t miss this chance to hold the title of the Best BBQ Pit Master in the Bahamas.
BBQ Teams will be competing for cash prizes and medals in 6 competition categories, Best Beef, BBQ Sauce, Poultry, Pork Ribs, Seafood, Pork Butt, and Showmanship (the coolest looking booth). The winner of this event will have the opportunity to represent The Bahamas in the most prestigious BBQ contest in the Caribbean Islands, The Cattlemen’s Caribbean BBQ Competition, June 29th & 30th in historic San Juan Puerto Rico with their team entry fee paid by The US Meat Export Federation.
Nassau Competition teams will be furnished with free pork ribs, pork butt, and chicken for the competition with their paid entry fee $150.00 by April 15. Registration after April 15 is $200.00 per team.

Free BBQ samples for the public: The public attending the BBQ contest will be treated to free samplings of each teams’ BBQ throughout the day while it lasts.
$1,000 cash prize money paid out to 1st ($500.00) 2nd ($300.00) 3rd ($200.00)
Throughout the day there will be musical entertainment, games and attractions for children and adults. cooking demonstration by restaurants, and local Chef’s.

The official mandatory TEAM rules meeting will be held at The Green Parrot located at the competition site on Friday evening April 19th at 7 pm sharp, registration 6 pm to 7 pm. Cash Bar Appetizer specials for the teams. Judges meeting Thursday April 18th 7 pm.
During this mandatory meeting all rules will be clarified and all questions regarding the competition will be answered for contestants. Download your copy of the rules and bring them to the meeting!
Your inscription will include your booth space, most, if not all your competition meats, and free meats for public samples. All other items needed for competing are supplied by the competitors.

Welcome to the Caribbean BBQ Association. If you like to BBQ and /or Grill you are in the right place.
We are a non-profit organization with a focus on:
• teaching the ancient art of slow smoking BBQ through classes held throughout the year • enjoying good food with family and friends • supporting worthy charitable organizations • Sanctioning and Judging BBQ Competitions
We have very few club meetings but try to have a BBQ outing once each quarter where we can share our knowledge of BBQ & Grilling while we socialize with each other.
It is easy and inexpensive to become a member. $20.00 for a single person membership, $25.00 for a family membership (includes couples, boyfriend or girlfriend, spouse and children) and $80.00 for an entire 5 person BBQ Team. Membership is good for one year from the date of joining and renewable each year on the anniversary date that you joined. Membership renewal is $20.00 whether you have a single membership, family membership, and drops to $75.00for renewal of a BBQ team membership.
Two of the most commonly asked questions are
1. What do I get for my membership fee?
• Membership privileges include a discount on BBQ and Grilling Classes, Judges Certification Classes, and some of our social events.
2. If you are a non-profit organization what do you need the membership fees for? Even non-profit organizations need funds to operate and the CBBQA is no different. Some of the regular expenses we incur include, but are not limited to:
• CPA and accounting services • Storage facility • Equipment maintenance • Licenses and trailer tags • Fuel & tolls • Insurance • Legal and Notary services • Office supplies
The CBBQA also sanctions several BBQ competitions in Puerto Rico and several other Caribbean Islands. Our members are always welcome as volunteers to help organize and run these various events. If you have taken the class and become a certified BBQ Judge you have the opportunity to work as a judge in many of the competitions that we sanction. It is a lot of fun and a great experience to be a part of a BBQ competition.

Visit the photo gallery for more picturesA summer afternoon BBQ with family and friends just go hand in hand and the Sabanera Dorado BBQ is the perfect example of that.
This is the kind of activity that any urbanization, community, pueblo, or business can do. It’s a fun family activity with great food, friendly competition and I can’t think of a better way to get to know your neighbors or coworkers. Sabanera Dorado does a fantastic job of this with their annual BBQ.
Prisa Group built the resort like urbanization and they organize the outing. The BBQ is held under a large covered basketball court located inside the property. The court is flanked on one side by a children’s playground and on the other side by the tennis courts. It’s August in the tropics so even though the area is covered with shade and there’s a good breeze blowing I still felt a little like a cat under a hot tin roof. Hydration is essential as with all BBQ competitions and besides the organizers having cold refreshments readily available many of the teams have their own special concoctions of Sangrias, Quenepa Pitoro,and good local Rums of Puerto Rico with cola or juice available for sampling among friends.
